Carnival Mardi Gras staterooms (a total of 2641 passenger cabins) are divided into 22 different categories, including 2-deck apartments (duplex suites) and 80 wheelchair-accessible cabins (for disabled passengers). All cabin bathrooms feature the fleet's first glass-door showers and in-shower shaving bar. Over 70% of all staterooms are outside, 300 pairs are connecting/family cabins. On December 14, 2018, Carnival announced that the new Mardi Gras will have the industry's first roller coaster at sea. The facility ("BOLT Ultimate Sea Coaster") will be built by Maurer Rides (Munich Germany-based company) specializing in roller coaster design and manufacturing.

Each meal at Bonsai Teppanyaki starts with a sampling of 5 appetizers (Miso Soup, Pork Belly Yakitori, Spicy Tuna on Rocks). Each meal ends with the specialty desserts "Chocolate Bento Box" and "Green Tea Ice Cream". The restaurant is open for lunch (seadays only) and for dinner (every night of the voyage).

Carnival Mardi Gras main dining rooms feature select items from the onboard steakhouse, available for an additional fee. Seafood lovers are pampered with the Seafood Shack - New England-inspired casual eatery. It offers both indoor and outdoor seating and the menu includes steamed lobster, lobster rolls, fried shrimp, fried clams, crab cakes, and other seafood surprises. Seafood Shack serves lunch and dinner and is priced a la carte starting at $4. One downside to the Carnival Mardi Gras cruise ship is that while there are lots of venues, some are too small to handle a rush.

Rudi’s Seagrill™ is the brainchild of cookbook author and master chef Rudi Sodamin. He has years of experience pleasing palates of vacationers… and this guy loves serving up a smile as much as Carnival does! But he’s serious about seafood, and an evening at Rudi’s proves it through the courses. Enjoy selections like seafood bisque and crab-stuffed lobster tail imperial — all served with an elegant flair that pays proper tribute to the beauty of the ocean from which so much fun, and flavor, arises. He's cute, he knows how to chill… and flavor is everything to the little guy. We only just found out about the years he spent soaking up the sun among the grass skirts and frangipani flowers of the South Pacific where, he would tell you, it’s easy being red.
